Much like Sainsbury Lockwood from the Base Game, If Amaretto is on the table, employ one of them as soon as possible. With few exceptions, if Amaretto shows up in your hand, play her and buy Love cards. There's absolutely no downside to being able to afford "3 Love" cards on the third turn of the game. More than one Amaretto is probably overkill, since once the love is all bought up she becomes dead weight.
